Once you print the label, you just need to mark the order as completed. On order completion, an email will be generated which will contain the tracking details.

How can I see a preview email of what they are getting from me? Does it include our logo, etc?

The order completion email is a default feature of WooCommerce.
The WooCommerce has the feature to see the format.
Our plugin only attaches the tracking number in it.
